My One Local Summer Meal this week is very basic, but very local. All of the components came from my own yard!
I sliced and pan fried a summer and zucchini squash. Then fried an egg, placed it on the bed of squash, garnished with some Sun Gold Tomatoes. It was amazingly delicious. I'm a fan of the squash cooked that way, anyway, and the egg was a nice touch. Added to the tastiness was the fact I harvested it all right outside, moments before cooking it. I have no pictures because I still struggle with food shots, but it was beautiful with the yellow, green, orange, and red.
Other than making dinner and doing some work for my business, I really had a hard time even getting out of my own way today. I slept very late this morning, and still took a nap with the baby this afternoon. Mini was tired too, and took a very long nap, and the baby was barely awake 1 hour together all day, despite our prodding her. I'm not sure what was in the air, but I'm hoping to be more productive tomorrow. I think tonight will be spent sitting and knitting...maybe I'll go grab a bowl of yogurt and blueberries. Yes, that sounds good.
A sluggish day maybe but at least you had a rainbow end- though no indigo or violet but hey maybe tomorrow you can have some eggplant or grapes. I'm glad it was a good meal, I miss my garden and getting to go pick something to make for dinner. Next spring. Maybe baby is going through her growth spurt a little early. I can't remember the exact timing but I'm pretty sure that all three of mine went through a very sleepy stage around this time there first year- they are all March babies. We also always went 'home' to see family in late July after each addition and would return home in August, so that may have had something to do with it too. Just a thought, you know me- always thinkin'

I'll go with growth spurt...sounds better than lazy, which is what I felt like I was being. The baby, of course is never lazy, she's full of energy, as is Mini, so if the baby is going through a growth spurt seems she would be sucking more energy from me...no pun intended, since I'm still her only form of sustenance. Mini is back to normal today, so I think she was just having a "catch up day". Sometimes she does that when she's refused to nap for a few days in a row. At any rate we are all up and moving today, and I'm going to hopefully get something good accomplished!
